3 Hearty Soup Recipes Perfect for Parties

1. Stone Fruit Soup

This savoury soup will instantly ‘wow’ your guests.

Time required: 40 minutes

Makes: 4 servings

You’ll need:

Pepper

Salt

1 small clove of garlic, grated

2 tsp sherry vinegar

2 tbsp olive oil + more for serving

1 lb orange or red heirloom tomatoes, quartered

1 ¼ lb peaches or nectarines, pitted + slices for serving

Method:

  1. Use a blender to puree tomatoes, nectarines, oil, salt, pepper, garlic and vinegar. 
  2. Refrigerate for at least an hour or overnight before serving. 
  3. Garnish with a drizzle of olive oil, cracked pepper and sliced nectarines.

2. Pumpkin Soup

This comforting soup is basically, fall in a bowl. 

Time required: 10 minutes

Makes: 4 servings

You’ll need:

¾ tsp salt

2 tsp pumpkin pie spice

½ cup heavy cream

4 cups chicken broth

1 can pure pumpkin

2 tbsp olive oil

1 medium onion, grated

Method:

  1. Heat olive oil on medium heat in a saucepan. Add onion and cook until soft or for 3 minutes. 
  2. Add salt, pumpkin pie spice, cream, chicken broth and pumpkin stirring frequently until the soup simmers or for 3 minutes. 
  3. Serve piping hot soup in bowls and store the remaining in an airtight container in the refrigerator for up to 72 hours. 

3. Melon-Cucumber Soup

This no-cook soup is bright and refreshing which makes it perfect for summers. 

Time required: 45 minutes

Makes: 4 servings

You’ll need:

Salt

Pepper

2 tsp sugar

3 tsp fresh lime juice

3 tbsp red wine vinegar

½ cup flat-leaf parsley

½ small honeydew melon, washed, seeded, rind removed and cut into pieces

1 lb English cucumbers, cut into pieces + more for serving

Watercress, to serve

Method:

  1. In a blender, puree lime juice, vinegar, parsley, melon, cucumbers and salt until smooth. 
  2. Refrigerate for at least an hour or overnight before serving.  
  3. Garnish with cracked pepper, sliced cucumber and watercress before serving.
